Cornbread

This humble yet tasty and filling dish can be a saviour when you are just too hungry and lazy at the same time. Think of it as a lightly sweetened cake-bread with a coarser texture and deeper flavour. You can even enrich this bread with nuts, raisins etc. This also makes for a perfect tiffin or tea-time snack. So, without much ado, let’s dive into the recipe.

Cornbread (Veg) - Recipe

Ingredients:

1. Cornmeal  
2. Flour  
3. Baking Powder  
4. Milk  
5. Yoghurt / Dahi / Curds  
6. Sugar  
7. Salt  

How much of everything?

I generally dislike this idea of measuring things while cooking - in my case, my heart and tummy decide what goes in - but, specially when it comes to baking,

Directions:

Mix the dry ingredients together: Mix the cornmeal, flour, baking powder, salt and sugar together.
Add in the milk and yoghurt: Whisk together the dry mixture obtained from Step 1 with milk and yoghurt. Beat this mixture to form a smooth paste. Just taste a little (I said a little!) of the batter to check the level of sweetness. Add more sugar if required.
Bake: Pour this batter into a baking tray and bake this in the oven at about 180 degrees for about 20 minutes. If at the end of it, you feel the bread hasn’t baked well in the middle, bake for another 5 minutes at about 170 degrees or as per your judgement.
